Our culinary

Truly green and crispy salads, savory and special cream soups, and original and delicious aperitifs anticipate the triumphal entrance of the main course. Some even insist that the gran finale comes with the dessert. This is the Bistrô da Onça tasting menu, a step by step between desires, sensations and pleasures around the table.

The recipe notebook is like a traveller’s diary, filled with experiences, friendships and surprises. The recipes express the cooks Carlos and Jeff’s lives, an intersection of destinies, cultures and encounters.

The daily tasting menu is vegetarian and is a fusion of international food with local touches with the experience of living in the Bahian Sertão (semi-arid). The classic Spanish tortilla involves delicately sweet Brazilian sweet potato in place of regular potatoes. Their Indian curry is given a lightness with the addition of local licuri coconut oil (rather than ghee), homemade coconut milk and cardamom.

Every week a new menu is created according to the seasonal variety of the vegetable gardens.

Everything is made by hand using local methods where possible, to guarantee an authentic slow food experience. As well as their delicious dishes, Bistrô da Onça also serves and sells a range of their own home made produce. Permaculture

The goal at Bistrô da Onça has been that all fresh produce comes from their own farm, and this continues to be their main objective. The project began with the restoration of a neglected piece of property with great potential for the development of sustainable agriculture because it’s located in a small valley with a special microclimate due to its altitude, humidity and lower temperatures.

The fact of having the National Park next door meant a direct contact with a more natural and wild environment. Read more…
