"With this passion for environmental recovery and for a fresh and healthy gastronomy, an aesthetic and spiritual sense of life has always being present. My vision from the very beginning was to create a small paradise.”

Carlos Uanini was born in Argentina and graduated as Engineer in Agronomy at Cordoba’s National University. He also studied theater at the Goethe Institute, later heading to Germany with a scholarship. He lived for a while in Paris and then longer in California, where he had a studio business of hand-made fabrics and fashion. It was also there that he got his firsts steps in the gastronomy world in restaurants in Los Angeles and in the area of Sacramento.

He was formed as an Iyengar yoga teacher in Buenos Aires where he started teaching and then he moved to Barcelona where he opened his own yoga studio: Estudio Articular.

After meeting Jeff, they envisioned Bistrô da Onça together, as a project of environmental recovery and organic food that would provide an experience and an example of sustainable life, good food and beauty.

The Chapada Diamantina in the state of Bahia, Brazil was the place chosen to make this dream a reality.
